Tofu –
Slice even thickness slabs
Arrange on a dish towel, folded so it is 3-4 layers thick under the tofu.
Cover with similar thickness of dish towels
Put a wooden cutting board on top and let the tofu-sandwich-tower sit for 5-10 minutes.
Take the tofu out, dip in Soy Vey Very Very Teriyaki sauce and put on a baking sheet.
Put on high rack in oven, on broil.
Watch carefully and turn it over to cook the other side, till each is how you want it.
Peanut sauce –
3 tablespoons (heaping) each of crunchy peanut butter and sesame oil
Stir until blended smoothly
4-5 teaspoons each of rice wine (called “rice seasoning”), rice vinegar, and water
Stir until blended smoothly
1-2 teaspoons hoisin sauce
1/2 teaspoon red pepper sauce (green lid)
Stir again
Voila!
